Slow Cooker Creamy Chicken and Tortellini Soup
 

Okay, if there is any soup you need to make, it is this one! I know it's summer, but it doesn't matter. The soup is worth it! I takes very little time to prep and cooks in the slow-cooker so...no effort basically! It's great leftover too, so make a bunch and enjoy for days!

We have this Slow Cooker, and it was a little bit too small. I ended up scooping some into a pot on the stove top, and adding the spinach and tortellini in both places. I just cooked it on the stove top from there. It wasn't a huge deal, but if your slow-cooker is a bit bigger, it may fit just fine!

The best part about this soup is that it is also delicious left over! You can see in the picture below that it is definitely less creamy, but still has the same amazing flavor!

 
Creamy Chicken and Tortellini Soup

Creamy Chicken & Tortellini Soup

Makes: 6 Servings

Creamy Chicken & Tortellini Soup

Ingredients:

  • 1 Small Onion, diced
  • 3 Garlic Cloves, minced
  • 1 (6 oz) Can Tomato Paste
  • 2 Tbsp Italian Seasoning
  • 1/3 Cup All-Purpose Flour
  • 3 Tbsp Olive Oil
  • 4 Cups Chicken Broth
  • 2 (14.5 oz) Cans Petite Diced Tomatoes
  • 1-1.5 lbs Boneless, Skinless Chicken Breasts
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 4 Cups Frozen Tortellini
  • 5 oz Baby Spinach (1 small pkg Organic Girl)
  • 1/2 Cup Parmesan Cheese
  • 1 Cup Heavy Cream

Instructions:

  1. Dice onions and garlic. Add to a small microwave safe bowl along with the flour, 1 Tbsp italian seasoning, tomato paste, and 1 Tbsp olive oil. Microwave for 5 minutes, stirring ½ way through. This will be a pasty mixture! Add to the slow cooker.
  2. Add broth, tomatoes, chicken, salt, pepper, and the other 1 Tbsp of italian seasoning and stir together.
  3. Cover and cook on low for 4-6 hours or high for 3-4 hours, until chicken is tender and can easily be shredded.
  4. After 4-6 hours on low, remove chicken and shred. Add back into slow cooker along with the tortellini, spinach and parmesan cheese.
  5. Warm the heavy cream in the microwave briefly, and add it into the slow cooker. It can curdle if you don’t warm first!
  6. Cook for about 30 more minutes until tortellini are cooked through.
  7. Ladle into serving bowls and enjoy!
